How do islands form from volcanoes?

I was reading about Easter Island and know it formed from 3 different volcanoes building up from beneath the sea, and i was wondering: how did this presumably rock surface become a green, soil-covered landscape? i know the timeline is probably tens of thousands of ears, if not more, but if anyone could give some information how this could become a luscious green island i'd love to know :) thanks.
